The Basmati Harvest Calendar
Basmati is primarily a Kharif crop in India, planted in June–July and harvested between October and December:
- June–July: Transplanting season in Punjab and Haryana. The new crop is in the field.
- October–November: Harvest begins. Fresh-cut Basmati enters the market from November onward.
- November–January: New crop Basmati is available but not yet at premium quality. Fresh-harvested grain has high moisture content and hasn't yet aged.
- Year+1 onwards: The best of the previous harvest has been in controlled ageing. Premium aged Basmati from the current year's crop won't be at its quality peak until 12–24 months later.
What "New Crop" vs "Aged" Means for Buyers
When you see "new crop 2025" Basmati offered in November–December 2025, you're buying freshly harvested grain that:
- Has higher moisture content (slightly heavier but not better)
- Is less aromatic than properly aged Basmati
- Cooks slightly stickier than aged grain
- Has a lower glycemic index potential (ageing increases resistant starch)
Premium aged Basmati being sold in 2025…2026 was typically harvested in 2023–2024 and has been in controlled storage since. This is the product worth paying for.
